The leading chef combines french techniques with Asian and American flavours to produce food of the highest quality. David is also one of the inovators experimenting with molecular gastronomy as made famous by the Basque restaurant elBulli. The cookbook Momofuku is a daring and adventurous leap into the depths of Mr Chang’s cooking style. The book is written in a style natural to the chef with the more than occasional obscenity thrown in for good measure.

The Momofuku restaurants celebrate pork dishes to a degree that they have now become famous for such creations as the now infamous $200 pork butt. The dish feeds up to ten and makes for a culinary experience that will never be forgotten. The cookbook discusses recipes, sourcing of ingredients and culinary techniques and offers a rare glimpse into the Mr Changs imagination. |
Momofuku is a fantastic read for the aspiring chef or home cook alike. While some of the recipes would border on impossible to recreate in a home kitchen the style of writing makes for an enjoyable and informative read.
